The Gastrosense project evolves the gastronomic experience by integrating neuroscience, technology and multisensory design, transforming the way we experience and enjoy gastronomic spaces.

Its objective is to model a multisensory system to encode the elements of architecture and interior design in the gastronomic context. The premise is clear: design gastronomic spaces that not only satisfy functional needs, but also focus on the physiological, emotional and cognitive needs of diners and employees.

Thus, computational neuroscience is integrated, which will provide real-time data on the neurological, physiological and environmental responses of users in these spaces. The data, collected in a non-invasive way, allows dynamic adaptations to be made to improve gastronomic experiences, offering greater efficiency in the interventions carried out in the environment.

Gastrosense addresses the need for personalization in the gastronomic sector, recognizing that not all people perceive and feel the same way. The research proposes to establish precise relationships between the perception, emotional response and behavior of customers, considering both the design of the space and the habitat products used.

The initiative also seeks to identify how different environmental parameters, such as physical-environmental conditions, materiality, space distribution and styles, affect customers’ experience and preferences during a meal. Big data analytics will play a crucial role in this process.

Gastrosense is powered by Interiors Living Lab and led by AMBIT Living Spaces Cluster. Among its consortium, the team includes Elisava Research, Re Think Tourism Association, Faro Barcelona, Bassols, Goli Neuromarketing, Somos Nido and CETT Barcelona School of Tourism, Hospitality and Gastronomy.
